There is a common thread woven through the fabric of Dawn’s extensive hospitality background. It is her love for people and a sincere warmth towards others. This paired with a drive to create a memorable and unique experience has created a career in service and leadership that began humbly and culminated with the Ritz Carlton, Gary Danko, and Hamel Family Wines.

Executive Chef

Joe Ball

Joe’s culinary training is rooted in French kitchens. He pairs this foundation with local products and the comfortable, eclectic style of California Cuisine. His most recent position was Chef de Cuisine at La Folie and we are grateful to have him as our Executive Chef. Joe looks forward to offering our guests a menu that is approachable and refined, with a focus on organic and sustainable products.

Matteo Villano

Born and raised in Italy, Matteo has an innate sensibility and passion for food, wine, and hospitality. He received a Master’s in Food Culture and Communications at the University of Gastronomic Sciences and became passionate about wine after graduating. His dedication and desire to learn paired with his knowledge of winemaking and viticulture offered him exceptional opportunities in both the US and Europe. His genuine care for everything he does is felt by both his coworkers and our guests.
